Every batch is roasted at a dedicated small-batch facility in Oregon, where every 60kg run is dialed in on a drum roaster. US Roaster Corp and Loring machines are built for the kind of work that rewards patience and precision. Drum roasting allows heat to move slowly and evenly through each batch, developing complexity without scorching the delicate compounds that give specialty coffee its character.
Wand & Owl works with a carefully chosen roster of varietals: Caturra, Colombia, Castillo, Typica, Bourbon, each one selected for what it brings to the cup. These aren't interchangeable. A washed Caturra grown at 1,800 meters carries a brightness that a natural-processed Bourbon simply won't, and each roast profile is built accordingly.
Every bean arrives with a story that gets taken seriously: the altitude where it was grown, the way it was processed, whether washed, natural, or honey, the soil it came from, the hands that picked it. High-altitude beans develop more slowly, building sugars and acids that translate into layered, nuanced flavor. Washed processing strips away the fruit before drying, producing cleaner, crisper notes. All of it factors in before the roaster ever comes on.
