Black Cat Reserve is a naturally processed Ethiopian Sidama single origin, raised-bed dried for up to three weeks at very high altitude where heirloom varieties have been growing since coffee itself began. Berry, stone fruit, and jasmine florals layer over a wine-like depth that reveals itself slowly and lingers longer than expected. Expressive. Aromatic. Completely sure of itself. Ethiopia is the birthplace of coffee. Sidama is where it shows off. We just had the good sense to get out of the way.
Natural processing and raised-bed drying preserve everything extraordinary about this bean: the clarity, the complexity, the extraordinary genetic diversity of Ethiopian heirloom varieties that no other origin in the world can replicate. Black Cat Reserve is the result of centuries of tradition, very high altitude terroir, and the kind of patience that produces something genuinely worth waiting for.

Natural/dry process with the whole cherry dried on raised beds for 14–21 days, with this specific lot dried for 16 days. Raised-bed drying ensures even airflow and consistent cherry fermentation, enhancing the vibrant fruit and floral complexity that defines Ethiopian natural coffees. Final moisture content of 10–12% ensures optimal stability and shelf life.
